Solina wheat, originally from Abruzzo, is a very rustic soft wheat. It produces a flour that is particularly suitable for bread-making and the production of typical cakes, but is also suitable for the preparation of handmade pasta. Jervicella soft wheat is an ancient variety grown in the southern Marche region. The mixture of Solina and Jervicella soft grains gives rise to a semi-wholewheat flour with a particular and sought-after aroma.
